Freeze Drying
Freeze Drying is a method of drying frozen foods without melting the ice contained in the food.
The food stays solid during drying and cannot shrink. This gives a product which rehydrates instantly; just add back the water. Because the product does not shrink during drying you get the texture and appearance of the fresh product. Freeze dried products are natural and do not need preservatives to give a long shelf life. Colour, flavour and nutritional value are superior to product dried by other methods.
